Puff Pastry pizzette

What you need

  • Puff-pastry sheet or roll
  • Tomato sauce (plain pulp works the best) – my favorite one is Mutti but any other good quality sauce will do
  • Mozzarella cheese (Bufala is best but you can also use the especially-made for pizza kind, or any other favorite melting cheese)
  • Dry oregano (Sicilian preferred)
  • Capers (I prefer those in salt but the pickled kind also works great)
  • Round cookie cutter  - I use one approximately 1 cm (half an inch) larger than my muffin cup
  • 12-cup Muffin pan
  • Salt and pepper to taste
  • Olive oil

How to make them

  1. Start by cutting the puff pastry in circles, then place them in each of the muffin cups.
  2. Spread a bit of tomato sauce on each of the circles.
  3. Finely chop the mozzarella cheese and sprinkle it on top.
  4. Add salt, pepper, and a caper on each of the circles and drizzle with a bit of olive oil.
  5. Bake at 160° C (320° F) for approximately 15 minutes (depending on your oven), or  until the edges are puffy and golden brown.

They may be served warm or cold.
