4 slices of Tuscan-style bread (Ciabatta, Focaccia or any other country bread will also work great)
A couple of cloves of garlic
60ml (1/4 cup) extra-virgin olive oil, preferably from Tuscany
Salt and black pepper to taste
400g (approx. 2 cups) of ripe tomatoes (datterini or cherry tomatoes will also work great)
4-5 fresh basil leaves
How to make it
Use a griddle to roast the bread slices. If you do not own a griddle, you may use a bread toaster instead (select medium-high toasting temperature). Set aside to cool.
Slice the cloves of garlic in half.
Rub the garlic halves on the toasted slices and sprinkle with half the amount of olive oil.
Dice the tomatoes in small cubes and sprinkle with the rest of the olive oil.
Gradually mix in the black pepper and salt to the tomatoes.
Top the slices with the diced tomato topping.
Coarsely chop the basil leaves and add them on top.
