Bruschetta (serves 4)

What you need

  

  • 4 slices of Tuscan-style bread (Ciabatta, Focaccia or any other  country bread will also work great)
  • A couple of cloves of garlic
  • 60ml (1/4 cup) extra-virgin olive oil, preferably from Tuscany
  • Salt and black pepper to taste
  • 400g (approx. 2 cups) of ripe tomatoes (datterini or cherry tomatoes will also work great)
  • 4-5 fresh basil leaves

How to make it

    

  • Use a griddle to roast the bread slices. If you do not own a griddle, you may use a bread toaster  instead (select medium-high toasting temperature). Set aside to cool.
  • Slice the cloves of garlic in half.
  • Rub the garlic halves on the toasted slices and sprinkle with half the amount of olive oil.
  • Dice the tomatoes in small cubes and sprinkle with the rest of the olive oil. 
  • Gradually mix in the black pepper and salt to the tomatoes. 
  • Top the slices with the diced tomato topping.
  • Coarsely chop the basil leaves and add them on top.
